PPI can be set after taking the picture by setting the resolution to 300 in your post processing software, If you are using photoshop elements, it would be Alt+I then R and then you get the Image resize tool, set the resolution to 300, then if they want a specific pixel x pixel or inch x inch width you can set that in the boxes above resolution.
