Baking Peach schnapps into peach cobbler, doesn't so much add an alcohol to the dish as most cooks out, but it adds a new peachy flavor.

The kahlua is more like mixing vanilla ice cream and chocolate syrup.

Blackberries might not go that well with chocolate, something like rasberry tart might taste better with chocolate flavoring.. Definately would go good with the ice cream.... but who knows, I eat wierd stuff.. Just finished off some raisins soaked in espresso.

I have about 2 cups of dried/frozen candycap's that I could use to make some kind of icecream/cookies or something, maybe a rustic bearclaw/ mix the candycaps (strong maple syrup flavor from wild mushrooms) in with the pastry, or into some cheasecake frosting, then mucho almond paste filling These things go well in pancakes/cookies/icecream etc..

I dunno what kinda schnapps you use, but the stuff I tasted a while back left a real nasty plastic aftertaste, and it was in a glass bottle.. Reminded me of flavored italian syrup aftertaste.
